Ambert is a town in the Puy-de-Dôme department in Auvergne in central France.

Ambert is famous for its Fourme-d'Ambert cheese and paper mills.  It is also know for the circular town hall.

Fourme d'Ambert is one of France's oldest cheeses, originally produced in Roman times.  It is a pasteurised cow's milk blue cheese. The cheese has a distinct, narrow cylindrical shape.  The semi-hard cheese is iinjected with "penicillium roqueforti" spores and aged for at least 28 days. During this time at weekly intervals, the cheese is injected with a sweet white Vouvray wine.

There is a cheese museum and an old paper mill is open to visit.
